My experience running Mori Café is what inspired me to create this book of recipes for you. After exploring every nook and cranny of vegan Japanese cuisine, I felt it was important to share its secrets so that as many people as possible realize that today we can eat well while also adhering to a diet that is respectful and considerate of animals and nature.

Nothing is worse than travelling to a country that refuses to accommodate your diet. I watched a couple on a plane with a peanut allergy who had airline staff who barely acknowledged their allergy even though the couple wore masks because the allergy was airborne. 

The same flight did not even accommodate the passenger request beside me who requested 6 months in advance for a special meal following Halal guidelines even though they had a dropdown menu on their website where you can order special meals.

I am happy to say there are over 1140 Vegan Restaurants in Paris, including author Julia Bouchard’s restaurant Mori Cafe.

Whether you are looking to reduce the meat content in your diet or you are a lover of Asian vegan cuisine, Julia Bouchard has written a book that has 70 plant-based Japanese recipes that she cooks in her restaurant, including essential sauces, main dishes, side dishes, desserts and street foods. The street foods are Western dishes prepared in the Japanese style. Her mother was Japanese, and Julia was immersed in the Japanese culture. In Japan and Paris, Julia had difficulty finding Japanese restaurants with Vegan options. This inspired her In 2020, she opened her first Vegan restaurant Mori Cafe. The recipes are classified by category and season respecting the cycles of nature.

My Thoughts

I received a copy of this book from NetGalley. I visit Japanese restaurants regularly and find that there are vegan appetizers but they are missing vegan main dishes on their menu. Another problem is meat is hidden in broth. For example, Dashi is sometimes made with fish and some wet rice dishes have chicken pieces for flavour. Julia solves this by finding vegan substitutes for all her dishes. I have always hated cooking Asian food at home because there is too much sodium in the sauces sold in Asian food stores. I was happy that this book has given me a solution by having homemade recipes for popular essential sauces and noodles. If the author were to add more to this book I would add more homemade sauce recipes. There are lots of irresistible recipes. The illustrations are high quality and authentic. Real pictures that display the outcome of each recipe.
