Mother’s Day Brunch in Bed

May 13th is a day where Moms get to sleep in extra late and have breakfast served to them in bed. The recipe below of herbed baked eggs and toast is perfect for mother’s day because older children can make it themselves, and even young children can make most the meal themselves, with some supervision from your partner. Give your partner/kids a hint about what you would like for brunch on Mother’s Day by leaving this window open for them to find next time they go online.

Ingredients:
2 eggs

2 tablespoons of whole milk or cream

1 teaspoon fresh parsley

1 teaspoon fresh thyme

Salt and pepper

Cooking Spray

Bread

Directions:
Preheat the oven to 350 degrees.
Take an individual ramekin and give a light spritz of cooking spray.
Using scissors cut up the parsley and thyme into tiny pieces; sprinkle on the bottom of the ramekin.
Gently crack both eggs into the ramekin leaving the yolks whole.
Pour the milk or cream on top of the eggs.
Place ramekin on a rimmed baking sheet and pour hot water into the baking sheet.
Place the sheet in the oven and bake for 25 minutes.
With a few minutes to left on the oven timer, place some bread in the toaster.
Take the eggs out of the oven and let cool for a minute or two.
Sprinkle on a pinch of salt and a few cracks of pepper on the eggs.
Once the bread is toasted, take a cookie cutter and cut out the toast.
Serve the toast alongside the eggs with some butter and jam, and some fresh orange juice.
